FRIED CATFISH FILET
Yellow corn meal
Salt and pepper
Oil

Put catfish fillets in cold water. Season corn meal with salt and pepper. Put fillets in corn meal and coat thoroughly. Fry in hot oil. Turn fish once. Drain on paper towels or brown bags.

Serve with French fries, slaw, hushpuppies, lots of ketchup, tartar sauce, and lemons!

Note: Fry whole catfish with corn meal and seasoning. Delicious!

HUSH PUPPIES

1/2 cup flour
2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
2 cups corn meal
1 small onion, finely chopped
1 beaten egg
3/4 cup milk

Sift together dry ingredients. Add onion.. Add beaten egg and milk to dry ingredients, stirring lightly. Drop a tablespoon of batter into hot deep fat, frying only a few at a time until golden brown. Drain on paper towels.

Smoked Catfish

Season catfish fillets with Creole seasoning. Cook on hot grill sprayed with no-stick cooking spray, until the fish are firm and flakes easily with a fork.

Serve with Cocktail Sauce or Horseradish Sauce.

Cocktail Sauce:

Mix together the following:
1 cup ketchup
1/4 cup freshly squeezed lemon juice
1 tablespoon horseradish
1/4 teaspoon black pepper

Refrigerate until ready to use.

 

Horseradish Sauce

Mix together the following:
1 (8 ounce) carton sour cream
1 1/2 tablespoons horseradish
1 teaspoon freshly squeezed lemon juice
1 teaspoon seasoned pepper

Refrigerate. This will keep at least a week in the refrigerator.

CATFISH PARMESAN

2/3 cup freshly grated Parmesan cheese
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon paprika
1 egg, beaten
1/4 cup milk
5 to 6 small catfish fillets (about 2 pounds)
1/4 cup margarine, melted
1/3 cup sliced almonds

Combine first 5 ingredients; stir well. Combine egg and milk; stir well. Dip fillets in egg mixture; dredge in flour mixture.

Arrange in a lightly greased 13x9x2-inch baking dish; drizzle with butter. Sprinkle almonds over top.

Bake at 350 for 35 to 40 minutes or until fish flakes easily when tested with a fork.

CATFISH DIP

4 catfish fillets, cooked and flaked
3/4 cup sour cream
1/2 cup Picanté Sauce
1 package dry Good Seasons Italian dressing
2 tablespoons lemon juice 

Mix well and chill.

 

WEIGHT WATCHERS CATFISH

Slightly butter casserole dish. Slice onions in bottom and bake 15 minutes at 350 degrees. Place 4 catfish fillets on onions; pour 1/2 cup Picanté sauce on each fillet. Cover and bake 30 minutes. Uncover and place 1/2 slice of Mozzarella cheese on each fillet. Broil until cheese melts.

 

CATFISH AMANDINE

2 tablespoons margarine
1 1/2 pounds U. S. farm-raised catfish fillets
1/4 cup slivered almonds
1 teaspoon grated lemon zest
2 teaspoons lemon juice

For garnish:
Parsley sprigs and lemon wedges or slices

 

Melt one tablespoon of margarine in a large skillet over medium heat. Add catfish fillets and cook for 2 to 3 minutes on each side, or until fish flakes easily when tested with a fork. Transfer to a serving platter and keep warm.

 

In the same skillet, melt remaining tablespoon of margarine. Add almonds, lemon zest and lemon juice and sauté for 1 minute. Pour sauce over fillets and garnish with parley and lemon.

 

CATFISH SUPREME

8 catfish fillets
Paprika
8 ounces tomato sauce
1 teaspoon lemon pepper seasoning
1 teaspoon garlic powder
1 teaspoon celery salt
1 tablespoon parsley flakes
Parmesan cheese 

Sprinkle catfish fillets with paprika. Place fillets in glass baking dish. Mix tomato sauce and seasonings. Pour sauce over catfish covering well. Cover with foil and bake at 350 degrees for 20 minutes. Open foil and sprinkle with Parmesan cheese and bake 5 more minutes. Uncover and run under broiler 2 to 3 minutes to brown cheese.

 

CATFISH LUCIE

4 catfish fillets
Salt and pepper to taste
Frozen lemon juice
Garlic powder
2 tablespoons white wine
Worcestershire sauce
4 strips of bacon 

Place catfish fillets in shallow baking dish, after rubbing them good with salt and pepper. Squirt lemon juice on fillets, then sprinkle with garlic powder. Pour white wine over catfish, shake Worcestershire sauce on fillets. Place strip of bacon on each fillet and cover with foil. Bake at 350 degrees for 20 minutes. Uncover and bake 10 to 15 more minutes. Serve with green salad and baked potato.

 

CATFISH CAESAR

6 U. S. farm-raised catfish fillets
1 bottle Seven Seas Caesar salad dressing
2 cups mild Cheddar cheese, grated
Potato chips, crushed 

Dip catfish fillets into salad dressing. Place catfish on a cookie sheet and top with cheese and potato chips. Bake at 350 degrees for 20 to 30 minutes or until fish flakes easily then tested with a fork.

 

CATFISH VERMOUTH

3 to 4 U. S. farm-raised catfish fillets
1/4 cup white vinegar
1/4 cup dry vermouth
1 tablespoon lemon pepper seasoning 

Sprinkle catfish fillets with lemon pepper seasoning and marinate in liquid (white vinegar and vermouth) for one hour. Simmer catfish 5 minutes on each side in a non-stick skillet until all the liquid is cooked out and the catfish is brown.
